Conchiglioni ricotta e spinaci (light!)

Da qualche mese sto seguendo un regime alimentare per perdere qualche chilo e come si sa le verdure, durante i pasti non devono mancare, di conseguenze nel mio frigorifero si trovano ortaggi di tutti i generi :)

Cerco di inventarmi ricette gustose per rendere i miei pasti un po’ meno tristi e ogni tanto esce fuori qualcosa di gustoso.

Se avete qualche altra ricettina light da suggerirmi sarà la benvenuta :D !!

Ingredienti

.

  • 200 g  conchiglioni
  • 1 kg spinaci lessi
  • 250 g ricotta
  • 1 porro
  • 3 cucchiai di parmigiano grattugiato
  • sale
  • pepe
  • olio

per la salsa

  • 1 l di brodo,
  • 40 g burro
  • 40 g farina
  • sale e pepe

Preparazione

.

In una capiente padella mettere gli spinaci appena lavati ad appassire a fuoco moderato.

A parte far imbiondire con un paio di cucchiai di olio il porro, pulito, lavato e tritato finemente.

Aggiungere gli spinaci cotti tritati a coltello, aggiustare di sale e lasciarli insaporire per alcuni minuti.

Nel frattempo mettere a bollire l’acqua  per cuocere la pasta che poi andrà raffreddata sotto l’acqua corrente e posta in una ciotola con un filo di olio.

Preparare il ripieno con gli spinaci, la ricotta e il parmigiano. Amalgamare bene il tutto fino ad ottenere un composto omogeneo.

A parte preparare la salsa procedendo come una besciamella utilizzando il brodo al posto del latte.

Riempire i singoli conchiglioni e disporli  in una teglia o pirofila. Cospargere con la salsa, un po’ di parmigiano e infornare a 180° a far gratinare.

Servire ben caldi.
